Vegan Whole Wheat Waffles

I’ve probably mentioned it a million times before, but I LOVE waffles, so whenever I find another waffle recipe I have to give it a shot. I thought this one was pretty good, especially with my apple butter smothered all over it. However, I don’t think this waffle recipe is for everyone. It is pretty thick and seed-like because of all the chia seeds, I also thought it was a bit dry, which is why I had to put so much apple butter on it 🙂 That being said though, if you like a thicker waffle that you can lather up then give these a shot, I still make them every once in a while and love them and my boys like them cold the next day 🙂

Ingredients

  • 1 3/4 cup Whole Wheat Flour
  • 1 TBSP Baking Powder
  • 1 TBSP Raw Sugar
  • Pinch of salt
  • 1 1/2 cup Almond Milk (or any other plant-based milk)
  • 2 Chia Eggs (see notes below on how to make these)
  • 3 TBSP melted Coconut Oil

 

Instructions

  1. Preheat Waffle Iron
  2. Combine dry ingredients ina mixing bowl
  3. Add remaining wet ingredients to mixing bow. Stir until well combined
  4. Pour waffle dough onto waffle iron and bake according to manufacturers instructions
  5. Serve with Pure maple syrup, fresh fruit or whipped coconut cream

Notes:

  • To make a chia egg, combine 1 TBSP of chia seeds with 3 TBSP of water. Let sit for 10 – 15 minutes until a gel forms. This is ONE chia egg. This recipe calls for two so use 2 TBSP of chia seeds and 6 TBSP of water
  • If you don’t have chia seeds you can substitute for flax seeds. Make flax eggs using the same seed to water ratio as chia seeds above. Alternatively, use 2 pureed bananas in place of the chia eggs
  • You can change the whole wheat flour for white if you prefer or do a half and half combination
  • Coconut oil can easily be replaced with olive oil, melted margarine or canola oil
