Baked Italian Sandwiches


  • French Bread (I use whole wheat)
  • Italian bread crumbs
  • Parmesan cheese
  • 2 eggs or egg replacement
  • Milk or Almond Milk
  • Cheese (Vegan Cheese)
  • Deli Meat
  • Veggies of your choice
  • Pasta sauce


  • Preheat oven to 425 degrees
  • Spray a 9X13 pan with olive oil cooking spray, or place a little bit of butter in the bottom of the pan and put it in the oven to melt while it is pre-heating
  • Slice bread to the thickness you want for your sandwich
  • In a dish mix bread crumbs and Parmesan cheese (just eyeball it 50/50)
  • In a separate dish mix the 2 eggs and just under 1/2 cup milk
  • Saute your vegetables, I use green peppers and onions

Assemble your sandwich

  • Dip one side of a piece of bread in the egg/milk mixture, then dip it in the bread crumbs and set it in the pan
  • Add a slice of cheese, your meat and your sauteed veggies
  • Then top it off with another slice of bread that has been coated in the bread crumb mixture on the outside
  • Continue doing the same thing with the rest of the bread
  • Put your assembled sandwiches in the oven for about 5 – 8 minutes, then flip them and cook them for another 5 – 8 minutes
  • I like to broil them on high for 1 – 2 minutes at the very end just to get a nice brown crispy finish on the bread
  • Warm a little pasta sauce in individual dishes for dipping
  • Serve the sandwich with the dipping sauce and a side salad for a delicious meal the family will love!!
