Homemade Whole Wheat Tortillas

Homemade Whole Wheat Tortillas

Ingredients

  • 2 cups whole wheat flour
  • 3 TBSP. Extra virgin olive oil
  • 1/2 tsp salt
  • 2/3 cup warm water

Directions

  • In a bowl, mix together the flour, oil and salt
  • Slowly add the warm water while stirring until a rough dough comes together. Add a little extra water if needed
  • Turn the dough onto the counter and knead for about two minutes
  • Return to bowl and let rest for 20 min
  • Divide dough into 8 equal balls
  • Roll each ball into a circle (you want them to be pretty thing)
  • Heat a pan over medium heat and grease lightly (I just used my pancake skillet so I could do 3 at a time)
  • Put dough ball into the pan and let cook until bubbles form (1 min.)
  • Flip over and cook another minute, pressing down with a spatula if needed
  • Repeat with remaining dough
  • Use immediately or store in an airtight container in the fridge or freeze

Baked Italian Sandwiches

Baked Italian Sandwiches

Ingredients

  • French Bread (I use whole wheat)
  • Italian bread crumbs
  • Parmesan cheese
  • 2 eggs or egg replacement
  • Milk or Almond Milk
  • Cheese (Vegan Cheese)
  • Deli Meat
  • Veggies of your choice
  • Pasta sauce

Directions

  • Preheat oven to 425 degrees
  • Spray a 9X13 pan with olive oil cooking spray, or place a little bit of butter in the bottom of the pan and put it in the oven to melt while it is pre-heating
  • Slice bread to the thickness you want for your sandwich
  • In a dish mix bread crumbs and Parmesan cheese (just eyeball it 50/50)
  • In a separate dish mix the 2 eggs and just under 1/2 cup milk
  • Saute your vegetables, I use green peppers and onions

Assemble your sandwich

  • Dip one side of a piece of bread in the egg/milk mixture, then dip it in the bread crumbs and set it in the pan
  • Add a slice of cheese, your meat and your sauteed veggies
  • Then top it off with another slice of bread that has been coated in the bread crumb mixture on the outside
  • Continue doing the same thing with the rest of the bread
  • Put your assembled sandwiches in the oven for about 5 – 8 minutes, then flip them and cook them for another 5 – 8 minutes
  • I like to broil them on high for 1 – 2 minutes at the very end just to get a nice brown crispy finish on the bread
  • Warm a little pasta sauce in individual dishes for dipping
  • Serve the sandwich with the dipping sauce and a side salad for a delicious meal the family will love!!

Ingredients

  • 2 cans of chicken
  • 1 pkg taco seasoning mix
  • 1 can of beans (black or refried)
  • Cheese
  • Taco shells

Directions

  • Drain chicken, put in a bowl and mix with taco seasoning
  • Warm taco shells in the microwave for a few seconds to soften
  • Put beans, chicken mix and cheese in taco shells and place on an oven pan
  • Bake for 12 – 15 min. at 350 degrees

Makes 12 tacos
