Vegan Whole Wheat Waffles

Vegan Whole Wheat Waffles

I’ve probably mentioned it a million times before, but I LOVE waffles, so whenever I find another waffle recipe I have to give it a shot. I thought this one was pretty good, especially with my apple butter smothered all over it. However, I don’t think this waffle recipe is for everyone. It is pretty thick and seed-like because of all the chia seeds, I also thought it was a bit dry, which is why I had to put so much apple butter on it 🙂 That being said though, if you like a thicker waffle that you can lather up then give these a shot, I still make them every once in a while and love them and my boys like them cold the next day 🙂

Ingredients

  • 1 3/4 cup Whole Wheat Flour
  • 1 TBSP Baking Powder
  • 1 TBSP Raw Sugar
  • Pinch of salt
  • 1 1/2 cup Almond Milk (or any other plant-based milk)
  • 2 Chia Eggs (see notes below on how to make these)
  • 3 TBSP melted Coconut Oil

 

Instructions

  1. Preheat Waffle Iron
  2. Combine dry ingredients ina mixing bowl
  3. Add remaining wet ingredients to mixing bow. Stir until well combined
  4. Pour waffle dough onto waffle iron and bake according to manufacturers instructions
  5. Serve with Pure maple syrup, fresh fruit or whipped coconut cream

Notes:

  • To make a chia egg, combine 1 TBSP of chia seeds with 3 TBSP of water. Let sit for 10 – 15 minutes until a gel forms. This is ONE chia egg. This recipe calls for two so use 2 TBSP of chia seeds and 6 TBSP of water
  • If you don’t have chia seeds you can substitute for flax seeds. Make flax eggs using the same seed to water ratio as chia seeds above. Alternatively, use 2 pureed bananas in place of the chia eggs
  • You can change the whole wheat flour for white if you prefer or do a half and half combination
  • Coconut oil can easily be replaced with olive oil, melted margarine or canola oil

Black Bean Tacos & Avocado Lime Sauce

Tacos!! I love Mexican cuisine, and when you have a group of people together that all eat differently then a taco bar is the perfect meal to please the omnivore and herbivore alike as well as little kiddos if you have any. My boys will down a bowl of re-fried beans in a second and they love it.

This black bean taco recipe from FoodLove has turned into one of my favorite bean recipes of all time, I’m being serious! I put it on tacos, burritos, nachos, quinoa bowls, taco salads or even by itself with some sweet potatoes on the side. I just want to kiss whomever came up with this recipe.  So give it a try, you won’t regret it I promise!

Ingredients

Black Bean Filling:

  • 2 TBSP Olive Oil (you can also just use water to saute)
  • 2 TSP Minced Garlic
  • 2 TSP Taco Seasoning
  • 1/2 TSP Onion Powder
  • 2 15.5 oz. cans Black Beans (Rinsed and Drained)
  • 2.3 cup tomato juice
  • 1/2 TSP Salt
  • 1/4 cup Chopped Cilantro

Avocado Lime Sauce:

  • 2 Avocados
  • 1/2 Bunch Cilantro
  • 3 Limes, Juiced
  • 1/3 cup Olive Oil
  • 1 TSP Taco Seasoning
  • 1 Pinch of Salt
  • 1 TBSP Sugar (sugar substitute)
  • 2 TBSP Water

Directions

For the beans:

  • In a non-stick skillet, over medium heat, heat olive oil, garlic, taco seasoning and onion powder for 2-3 minutes.
  • Add black beans, tomato juice and salt and stir until combined.
  • Let beans cook, stirring occasionally, for 8-10 minutes, or until most of the liquid has evaporated
  • Remove from heat, stir in cilantro, and serve immediately

For the Sauce:

  • Add all ingredients in a blender and blend until smooth

For the Tacos:

  • Heat one side of the tortilla over a skillet for about 10 seconds
  • Flip over and fold tortilla in half to create the taco shape
  • Cover one side of each tortilla with beans, then top with cheese
  • Close tortilla and heat 3-4 minutes longer on the skillet
  • Remove from skillet and serve with Avocado lime dipping sauce

Ingredients

  • 1 lb. ground beef/turkey/Tofu (browned)
  • 15 oz. can of dark kidney beans (drained and rinsed)
  • 15 oz. can of black beans (drained and rinsed)
  • 15 oz. can of chili beans
  • 14.5 oz. can of tomato sauce
  • 14.5 oz can of crushed tomatoes
  • 2 cups of Vegetable broth
  • Chili seasoning for taste
  • Top with a little bit of cheese and plain greek yogurt if desired

Directions

  • Combine all ingredients in a large pot
  • Stir together
  • Heat on medium – high until the chili starts to simmer
  • Reduce heat to low, cover and simmer for 20 min. or longer
